Spaghetti Bolognese

 

 
  • 1 – Carrot (grated)
  • 1 – Onion (chopped)
  • 1 to 2 – Peppers (chopped) your choice of colour, I like red and yellow
  • 2 – OXO cubes (Beef) Italian Herb and Seasoning to taste
  • 2 – tins of chopped tomatoes
  • 500g – Lean Steak Mince
  • A dash of HP sauce
  • A dash of Worcestershire Sauce
  • Salt and Pepper
  • Tomato puree
  • A glass of red wine
  • 2 cloves of garlic
  • Spaghetti
 

Its so simple but so tasty…

 

Fry mince and onions, once cooked, drain excess fat. Then add OXO cubes and the wine. Leave to soak for 30 seconds the add the two tins of chopped tomatoes

 

Add to cooked spaghetti with a sprinkling of Cheese on top

Homemade Pizza

 

 

 

 

  • 2 3/4 - 3 1/4 cups flour
  • 1 pkg Active dry yeast
  • 1 cup Warm water (120-130 degrees)
  • 2 tbsp Cooking oil or olive oil
  • 1/4 tsp Salt
  • 1/2 tbsp Pizza seasoning or Italian seasoning
  • 1 jar Pizza sauce or spaghetti sauce
  • 2 cups Shredded cheese
  • Desired toppings

 

Dough:

1. In a large mixing bowl, combine 1 1/4 cups of flour, yeast and salt. Add warm water and oil.

2. Beat with an electric mixer on low speed for 30 seconds, scraping the bowl. Beat on high speed for 3 minutes.

3. Using a wooden spoon, stir in as much of the flour as you can.

4. Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic. (6-8 minutes.)

5. Divide dough in half. Cover and let rest for 10 minutes. Use to make pan pizzas or thin crust pizzas.

 

Pizza:

1. Grease two 11x7x1 1/2 inch or 9x9x2 inch baking pans. If Desired, sprinkle with cornmeal.

2. With greased fingers, pat dough onto bottoms and halfway up sides of prepared pans. Cover and let rise in a warm place until nearly double. (30-45 min.)

3. For a browner crust, spread olive oil on crust before adding toppings.

4. Add pizza seasoning or Italian Seasoning to dough. Spread pizza sauce or traditional spaghetti sauce onto dough.

5. Add Meats, cheeses, veggies or desired toppings.

6. Bake at 425 degrees for 12-15 minutes or until done.

Grilled Steak With Potatoes

 

 

 
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 1 lb steak
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper
  • oven-fried potatoes
  • vegetable cooking spray
  •  4 large baking potatoes, (2 lbs.), sliced lengthwise into, 1/2-inch wedges
  • 1 tsp olive oil
  • 1 tsp rosemary, crumbled
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper

1. Combine vinegar, oil and garlic in shallow glass dish. Sprinkle both sides of steak with salt and pepper; place steak in dish and turn to coat. Cover and refrigerate 1 hour.

 

2. Make Oven-Fried Potatoes: Heat oven to 450øF. Line cookie sheet with foil; lightly coat with vegetable cooking spray. Toss potatoes, oil, rosemary, salt and pepper in large bowl. Spread in single layer on prepared cookie sheet. Bake 30 to 35 minutes, until golden and crisp.

 

3. Meanwhile, heat grill. Grill steak 6 to 8 minutes per side for medium rare. Serve with potatoes and chopped tomato and cucumber.

Bacon Wrapped Hamburgers

 

 

 

 

  • 70 g shredded Cheddar cheese
  • 5 g grated Parmesan cheese
  • 1 small onion, chopped
  • 1 egg
  • 15 ml ketchup
  • 15 ml Worcestershire sauce
  • 3 g salt
  • 0.3 g pepper
  • 455 g ground beef
  • 6 slices bacon
  • 6 hamburger buns, split


 

1. Preheat a grill for high heat.

 

2. In a large bowl, mix together the Cheddar cheese, Parmesan cheese, onion, egg, ketchup, Worcestershire sauce, salt and pepper. Crumble in the ground beef, and mix together by hand. Form into 6 patties, and wrap a slice of bacon around each one. Secure bacon with toothpicks.

 

3. Place patties on the grill, and cook for 5 minutes per side, or until well done. Remove toothpicks before serving on hamburger buns.
